I have set up nginx and HLS, everything is fine even the logs. I have used below links for generating unique IDs.

I want to make analysis on the access-log file however current configuration creates different Unique-ID's for the same client during the stream. Is there a way to keep Unique-ID in the session for the clients?

won't help and HLS clients don't necessarily use / may use multiple HTTP sessions per playback session. You can make a module that rewrites them3u8
playlists in order to add an unique tracking token for all playlist resources per client.
